Diseño de un Proceso para la Obtención de Pulpa Congelada a Partir de Orito (Musa acuminata AA)
Se analizaron los parámetros fisicoquímico y microbiológico del mejor tratamiento
de pulpa de orito, mismos que reportaron 4.87 en pH, 0.39 % de acides y 26.22
°Brix, además de no presentar crecimiento microbiano que deteriore la estabilidad
del producto.
Se realizó un análisis proximal al mejor tratamiento de pulpa de orito,
encontrándose que el producto final es rico en proteínas y carbohidratos, en
cuanto a humedad, cenizas, grasa y fibra se encontraron dentro de los rangos
reportados bibliográficamente.
Conclusiones
El propósito del presente estudio implementar un proceso industrial de extracción
de pulpa de orito (Musa acuminata AA). Se identificó las características propias de
la fruta y de la pulpa después de su proceso, clasificándolo como una fruta con
alto contenido de azucares, humedad y un bajo contenido de acidez. Los valores
obtenidos de cada parámetro fisicoquímico al aplicar diferentes concentraciones
de ácido cítrico y ácido ascórbico permitieron identificar que al realizar una mezcla
entre ambos aditivos a una concentración de 0,1% la actividad de la polifenol
oxidasa se inactiva y el color característico del orito se mantiene.
Por medio del análisis sensorial se determinó el mejor tratamiento al cual se realizó
el análisis de las características fisicoquímicas y microbiológicas, con esto se
obtuvo que la pulpa de orito se encuentra acorde a la Normativa Técnica
Ecuatoriana INEN 2337 que hace referencia a jugos, pulpas, concentrados,
néctares, bebidas de frutas y vegetales.
